Yummy!

Growing up in Texas and living there your whole life pretty much means that you are going to have your fair share of Mexican food. I just so happen to LOVE Mexican food!! I love, love, love enchiladas, fajitas, chips and queso, and I could practically drink the hot sauce! Oh, and don't forget the margaritas too! :)

Well, almost 2 years ago I moved a little more north in the state and the quality of the Mexican food has changed drastically! Where I am from, there are quite a bit of mom and pop Mexican restaurants and they are delicious! However, being in DFW, the restaurants are more commercialized and they are not as good. I have been to one here and there that is decent but every time I make a trip home, me and my hubby have a list of places we have to eat at while we are there.

What can I say? I need some GOOD Mexican food! :)

So, since we have moved I have been on a search for good Mexican recipes. I have cooked Mexican dishes over and over and I am getting better, but I just haven't gotten it the way we like it. Well, I came across Kelly, a fellow blogger, who also has a recipe blog that listed a wonderful concoction of beef enchiladas that the hubby and I made together last night. :)

This is her recipe:

Beef Enchiladas

1 lb hamburger meat
1 small onion, chopped
1 can of chopped black olives
1 can of cream of mushroom soup
1 can of Enchilada sauce
8 oz of shredded cheddar cheese
6-8 flour tortillas

Brown the meat and saute the onions in with it. Once that is done, add in the olives and let it heat and then add in 3/4 of the cheese and let it melt - mix it all together. Fill tortillas with the meat mixture and roll up. Combine the mushroom soup and enchilada sauce and pour on top. Top with remaining cheese. Bake at 350 for 30-40 minutes.

Mr. D and I don't like black olives so we decided to leave those out. Oh and we used corn tortillas instead of flour, as well as Old El Paso brand of enchilada sauce. This recipe is so simple and easy you must try it. So far these have been the best beef enchiladas that we have made at home yet! There is also plenty of room to toss in whatever else you might like to spice up the meat or the sauce a little bit.

This is what ours looked like straight out of the oven. I know it kind of looks like a big blog of brown, cheezy, goodness instead of enchiladas, but I promise you they are delicious! Oh, one more thing.. be careful when taking them out of the oven. The enchilada sauce was bubbling!

I'm really picky about Mexican food, too. I've never liked any enchiladas I've made, so I'll have to give these a try.

We honeymooned in Lahaina, too - same resort and everything! :-) Don't you MISS it on these chilly days?
